Honestly, masala dosa is not just a recipe for me – it’s a feeling. Whether it’s a lazy Sunday breakfast or a light dinner after a long day, a hot and crispy dosa with flavorful potato masala always feels comforting.
In this blog post, I’m sharing my simple, homemade masala dosa recipe that I personally follow at home. No complicated steps, no fancy ingredients – just the right method that gives you crispy dosa and tasty aloo masala, just like you get at a good South Indian restaurant.
What is Masala Dosa?
Masala dosa is a popular South Indian pure veg dish made using a fermented batter of rice and urad dal. The dosa is thin and crispy and is filled with a mildly spiced potato masala.
Because the batter is fermented, masala dosa is easy to digest and makes a wholesome, satisfying meal.
Ingredients for Dosa Batter
- 2 cups rice1/2 cup urad dal
- 1/4 teaspoon fenugreek seeds (methi)
- Salt to taste
- Water as required
Ingredients for Potato Masala
- 3 medium boiled potatoes (mashed)
- 1 medium onion (thinly sliced)
- 2 green chilies (finely chopped)
- 1/2 teaspoon mustard seeds
- 8–10 curry leaves
- 1/2 teaspoon turmeric powder
- 1 tablespoon oil
- Salt to taste

How to Make Masala Dosa – Step by Step
Step 1: Prepare the Batter
Wash and soak rice, urad dal, and fenugreek seeds for 5–6 hours. Grind them into a smooth batter using little water. The batter should be neither too thick nor too thin. Add salt, mix well, and let it ferment overnight or for 8–10 hours.
Step 2: Make the Potato Masala
Heat oil in a pan. Add mustard seeds and let them crackle. Add curry leaves, green chilies, and sliced onions. Sauté until the onions turn soft. Add turmeric, salt, and mashed potatoes. Mix well and cook for 2–3 minutes. Garnish with fresh coriander and keep aside.
Step 3: Make the Dosa
Heat a tawa well. Sprinkle a little water and wipe it clean. Pour a ladle of batter and spread it gently in a circular motion. Drizzle some oil around the edges. Cook until the dosa turns golden and crispy.
Step 4: Fill and Serve
Place a portion of potato masala in the center of the dosa, fold it, and serve hot.
